After spending over 10 years in the food and food service industries,
Emma & Liam knew it was time for a new adventure,
and they also knew that they wanted to start a business of their own.
They wanted to create something that embraced their belief that all food should be organically grown and locally sourced.
And they knew it had to be something that satisfied their sweet tooth!
So in 2009 Em & Li Maple Shop was born. With Maple Sap harvested from Canadian Maples right here is Southern Ontario and following only the most traditional and organic methods of Maple Sap collection.
Maple Production
Modern Maple Syrup productions started in the 1860’s when a Canadian borrowed some design ideas from molasses evaporators.
The ideas continued in 1872 a Vermonter developed an evaporator with two pans and a metal arch or firebox, which greatly decreased boiling time. In 1889, another Canadian bent the tin that formed the bottom of a pan into a series of flues, which increased the heated surface area of the pan and again decreased boiling time.
The production of Maple syrup stayed pretty much the same till the 1960’s. Because syrup making is so labor intensive farmers could no longer afford to hire the crews to gather all the buckets and haul the sap to the evaporator house.
In the 1970’s, syrup makers responded with other technological breakthroughs. Tubing systems were perfected and the sap came directly from the tree to the evaporator house. Vacuum pumps and Reverse-osmosis filters were added to the process.
However despite the advance of productions methods, Em & Li Maple always ensure that our primary focus is the highest quality harvesting of 100% organic, pure Maple sap.
